2025 Blanc of Pinot Noir
This white wine was made from organically grown red Pinot Noir grapes from Estate block 7, Dijon clone 777 and block 5A, Wadenswil clone. Judiciously pressed whole cluster to avoid color pick up from the skins. Fermentation was initiated in stainless-steel and racked one third through fermentation to neutral 500-liter puncheons. Stirred on the lees until primary fermentation was completed adding weight on the palate. Malolactic fermentation was avoided to preserve its fresh fruit flavors. Aromas of cherry blossoms, dried apricots, custard, and roasted hazelnuts. Dry and low in alcohol, yet full on the palette. Flavors of Rainier cherries, white nectarines, and hints of candle wax. Bright finish with lingering notes of chalky sweet tarts.
